White chocolate lattice used as a decorative cake topper.

 

Gently squeeze the chocolate out onto a baking tray lined with parchment paper. First, run the chocolate back and forwards in one direction, then go back lengthwise over the the first layer. Repeat as many times as required. I like to make a few extra in case of breakage. Believe me, they will be eaten anyway!

Lattice made from chocolate makes a perfect cake topper for any party cake. And they are really easy to make in either white, milk or dark chocolate.

Firstly, melt 100g chocolate buds in the microwave being careful not to burn. Slowly but surely is the key here.  When the chocolate has melted, spoon into a ziplock plastic bag. Apply a slight amount of pressure to push all the chocolate into one corner of the bag. Then, snip a tiny hole in that corner of the bag to allow the chocolate to flow. The flow size will depend on the size of the whole you snip from the corner. If you want thicker – cut a slightly larger hole.

 

Put in a dry place and allow to harden. Then apply as decoration to the top of your cake. I used three in a triangular prism effect but fiddle around until you are happy with the look of the cake. Voila!

The set white chocolate lattice ready to top the cake. Beautiful!
